We hope you've had a lovely week. Here's a new cake recipe to brighten up your Sunday:


Coffee cake with mascarpone icing


ingredients

for the cake

100ml milk

2 level tsp instant coffee

1 tbsp fine-ground real coffee grounds

175g unsalted butter, softened

100g light brown sugar

100g caster sugar

2 large eggs

100g plain flour

100g spelt or wholemeal flour

2 level tsp baking powder

75g brazil or walnuts, finely chopped (optional)

for the icing

250g tub mascarpone

150g icing sugar

2 tsp instant coffee dissolved in I tbsp hot water


Method

Heat oven to 180°C non-fan. Butter two 20cm sponge tins and line the bottom with baking parchment.

Combine milk, instant coffee and ground coffee in a saucepan and bring only just to the boil. Beat butter and both sugars till light and fluffy. Then beat in eggs one at a time. Add the slightly cooled coffee/milk mixture. Sift the two flours and baking powder together, then beat this through. Add chopped nuts. Divide between two tins and bake for approx 25 minutes.


Mix icing ingredients together with a whisk and spread in between and on top of cooled cakes. Delicious!
